Soda Bread
This recipe is so simple and delicious. I have not brought store bread since discovering this one.
This recipe uses wholemeal spelt flour but you can use whatever flour you want. If making gluten-free I would not use buckwheat as it may fall apart. But a good gluten-free flour should work. I am going to try Cassava flour which is recommended for breads.
Recipe:
2 cups of milk (I used almond but any plant milk is good)
2 tsp of apple cider vinegar (add this to the milk and let sit for a few minutes- this will sour the milk)
3 cups of flour (I used wholemeal spelt)
1 tsp of baking powder
1/2 tsp of salt
1/4 cup of pumpkin seeds
1/4 cup of sunflower seeds
1 tbsp of sweetener (I used honey, but maple syrup, rice malt syrup of chicory root syrup)
Poppy seeds or Sesame Seeds for the top (Optional)
Directions:
Mix apple cider vinegar into milk and let sit for a few minutes
Mix flour and baking powder together. Make sure this is well mixed as the baking powder is what helps it to rise.
Add in seeds if using.
Make a well in the middle of the dry mix and add the sour milk. Mix together
Pour into bread tin and bake for 35-40 mins on 180 c or 350f.
