Soda Bread

This recipe is so simple and delicious. I have not brought store bread since discovering this one. 

This recipe uses wholemeal spelt flour but you can use whatever flour you want. If making gluten-free I would not use buckwheat as it may fall apart. But a good gluten-free flour should work.  I am going to try Cassava flour which is recommended for breads.

Recipe:

  • 2 cups of milk (I used almond but any plant milk is good)

  • 2 tsp of apple cider vinegar (add this to the milk and let sit for a few minutes- this will sour the milk)

  •  3 cups of flour (I used wholemeal spelt)

  • 1 tsp of baking powder

  • 1/2 tsp of salt

  • 1/4 cup of pumpkin seeds

  • 1/4 cup of sunflower seeds

  • 1 tbsp of sweetener (I used honey, but maple syrup, rice malt syrup of chicory root syrup)

  • Poppy seeds or Sesame Seeds for the top (Optional) 

Directions:

  1. Mix apple cider vinegar into milk and let sit for a few minutes

  2. Mix flour and baking powder together. Make sure this is well mixed as the baking powder is what helps it to rise.

  3. Add in seeds if using.

  4. Make a well in the middle of the dry mix and add the sour milk. Mix together

  5. Pour into bread tin and bake for 35-40 mins on 180 c or 350f.
