Aquafaba

Aquafaba? What is that I hear you ask! It is the juice or liquid that is left over from a can or jar of legumes like chickpeas. Last night I made a chickpea curry and saved the juice to make chocolate mousse. Aquafaba has a combination of proteins, starches and plant solids that make it a great replacer for egg. You can use it as whipped cream, meringues bases, butter and cheeses. It even has its own website www.aquafaba.com

Chocolate Mousse Recipe
Juice of can or jar of chickpeas
Raw Chocolate
Maple syrup

Whip up the chickpea juice until it forms solid peaks (just like egg whites).
Melt chocolate in a bowl, over a pot of hot water.
Add maple syrup (to taste) to melted chocolate.
Fold chocolate mix to aquafaba and refrigerate for 30 mins.
