Kale Bread

Kale bread! So easy to make and packed with protein, vitamins A, C and E which are all good antioxidants contributing to good health. And gf! Delicious served with avocado and poached eggs for breakfast.

Ingredients:

  • 120gm of kale

  • 3 cups of almond meal (or a mix including buckwheat, coconut or gf flours)

  • 1 tsp of salt

  • 2 tsps of baking powder (gf)

  • 1/3 cup of oil ( coconut, olive or macadamia)

  • 4 eggs

  • 1 tbsp of lemon juice (grate in skin for zest)

  • 2 tsps of honey

Put kale in food processor and blitz. Mix dry ingredients together. Mix wet ingredients and then combine. Bake in oven at 180 degrees for 40mins.
